Tony Sousa, Lone Star Foodservice

Tony Sousa is the plant manager at Lone Star Foodservice in Austin, Texas. The company provides premium quality meat to restaurants throughout Texas.  Sousa, who is originally from Brazil, is responsible for designing and running the company’s dry aged meat program. It was great to meet (pun intended) him, and photograph this process.  For more detail, check out this article in the Austin American-Statesman.
